In Mass Effect 2, not only Jack changed orientation, but also Jacob Taylor. This was announced on Twitter by the game's animator Jonathan Cooper. He made two sex animations for the character, with a male and female version of Shepard.
Only the second got into the final version of the game.
We matched Brokeback so it wouldn't be unacceptable - but different rules for film and games I guess. Personally I still believe it was the wrong call to cut, as we protested at the time. People with a problem with can go fuck themselves - they don't deserve to play our games.

The scene was supposed to be like Brokenback Mountain frame by frame, but apparently, as Cooper mentioned, there are different rules for movies and games. The team protested against the decision. The animator believes that America is still not ready for this. The content was probably cut because some media would have spoken out against such scenes in the game.
Mass Effect 2 was released on January 26, 2010 for PC, PS3 and Xbox 360. It is unlikely that the Legendary Edition, which will be released this year, will return cut content.
